You said you have cajeta for the party. I was thinking what you could do with that, and a nice dessert (maybe not your typical Mexican dessert, although cajeta counts as a typical dulce) could be crepas de cajeta, with chopped nuts on the top. Flan is also an option. There are many good and simple recepies on the Internet; I can't seem to find mine at the moment. Hope this helps.
