Hey Margaret!

In addition to or instead of rajas con queso, you can try this absurdly simple yet delicious rajas soup:

You´ll need:

A tin of rajas
An onion
Chicken stock powder
Panela-type cheese in small cubes, i.e. the type that maintains its shape in heat
Milk

Rinse rajas carefully in cold water before anything else. They might be delicate and brittle but make sure you get rid of all the seeds and roasted bits of skin. Trust me, it's worth taking the trouble, otherwise the rajas are too spicy and the roasted skin tastes like preserved charcoal.

Slice the onion (one small onion per tin of rajas) and fry in a bit of oil until tender.

Add the rajas.

Add a bit of powdered chicken stock and stir gently for a few minutes.

Add milk until you cover the rajas and beyond.

Simmer stirring occasionally until almost boiling -

Turn off the heat. Add the cheese cubes and serve. Delicious!



Another veggie option is quesadillas de champiñones. O de champiñones con queso.

For the latter, chop or thinly slice some mushrooms. Crush and finely slice a clove of garlic, and roughly chop a handful of fresh parsley. Heat a frying pan and add some olive oil, then add the mushrooms and a small pinch of salt and fry quickly for a few minutes, tossing once or twice. Add the garlic and continue to fry for 4 or 5 minutes. Then add the parsley and take off the heat, stir well.

Put a bit of melting cheese on open tortillas on a comal and when the cheese starts to melt, add the mushroom mix and fold.

If you're making cheese quesadillas only and you have time - food processor, for example - you can chuck half an onion and 3 small tomatoes in there, a bit of fresh coriander, a small chile and a good pinch of salt, and whizz for a fab pico de gallo.

Or!

Molletes con pico de gallo. If you've got a grill, they're a piece of cake to make - slice baguette, slap a bit of refried beans and melting cheese onto each half and hey presto - some 8 minutes under the grill.
